Baked 9” pastry shell

½ quarts fresh strawberries
1/2
cup water, 1 tsp. Lemon juice.
1
cup sugar

½ tsp. Cornstarch

tbsp. Butter

food coloring

Rinse, drain, and hull berries. Place one quart of the best
berries in pastry shell. Crush remaining berries and combine with water,
sugar, and cornstarch in a saucepan. Bring to a boil and boil 2 minutes
or until clear. Add butter and enough food coloring to give a bright red
color. Stir in lemon juice. Cool to lukewarm.

Spoon sauce over whole berries in pie shell; chill in
refrigerator.

Whip one cup whipping cream, spoon on top of pie, and garnish
with whole strawberries. Serve immediately.
